In other words, you need something like M1, which emulates sound chips directly, so there is no gameplay to get in the way of listening to the music.
One catch with M1 is that AFAIK the latest version (at least for Windows) is a 32-bit only binary blob and hasn't been updated since 2007, which would mean it can't play things which were unemulated back then, such as the (decapped) Toaplan MCU data. Unless I'm mistaken, and a newer version of M1 actually does exist, and that one of our highest-ranking MAME devs simply hasn't updated his M1 page in over a decade.
