Makes me wish there was something like this for the Tekken series (preferably the arcade versions and not PlayStation 1). That said, porting 3D models, animations, sounds etc. across from different Tekken games would be a giant PITA compared to hacking a 2D game, even the movelist data format changed between games. Another issue is that the games have compressed data (models, textures, movelist data etc.), only decompressing what it needs into the tiny amount of RAM the machine had.
