This should theoretically be possible. It would require making a TAP adapter for one MAME instance and bridging the tap adapter to your computer's Ethernet controller. Instead, you'd connect your computer to an actual arcade machine (a Rush the Rock at a local arcade will probably be the guinea pig).
Vas Crabb was correct on how virtual network interfaces are required for MAME to utilize their Ethernet devices.
