Some possible options:
(1). Disable automatic updates and have someone disciplined check the machine 1-2 times per month and download / install updates.
(2). Grab a Raspberry Pi or 2. I've got 4 Raspberry Pis at work displaying dashboards, graphs and stats all round me from databases and data sources on local and remote private servers, and from Azure and other cloud sources. Cost peanuts to setup, and great fun to code.
