In reality, the games are 4:3 rotated (so 3:4) and MAME has to do some stretching to get the pixels the right shape. The default -aviwrite and F12 screenshot output is tuned for developers: you get exactly the pixels being rendered by the emulation if you don't mess with the options. That's great for us and completely terrible for posting on e.g. YouTube.

In the specific case of Galaxian, the starfield is at a higher resolution than the sprites and so a resolution was chosen where it's an integer scale factor for both layers. Long long ago when the starfield was not accurate (or, you know, right now on the Raspberry Puke) the game ran 224x256 or whatever the base resolution is.
