I know this will be confusing, but the producers of the UI builds have decided at this time to keep with their current MAME and MESS separation as before. This means that if you want to use the MAME build as it is officially presented right now with all the content provided, you need to download the mamedev.org provided binary and use an external front-end.
Dev has been suggesting QMC2 for a while now:

It is a QT-based front-end and multi platform and can be compiled locally with the current MAME toolchain. It can be basic in it's layout or allow for the most advanced configurations.
