In my experience TVs are typically limited in terms of which resolutions they will accept via component input. The converter box will probably run at a fixed resolution all the time, scaling whatever signal you send to it to one that is accepted by the TVs component input, 768x576 interlaced at 60Hz - if you're lucky - and the TV was built for export to Brazil (PAL60) lol.
If you can find out what resolution its sending to the TV you might be better off configuring MAME to run everything at that res in the first place and let your video card do the scaling, to avoid scaling artifacts introduced by the converter. Your video card should do a better job than the converter.
