I'm unsure of your exact needs. If you can give a couple of specific clues, I might be able to assist better.
Which format? What kind of captures do you need: random, arbitrary, or a set of captures like one every 30 seconds to give you an idea of each vid?
VLC plays almost anything without needing to use bloated codec packs. A couple of changes to place either the screen capture button, or assign a key combo to it, will make you just need to 1. load the vid, 2. seek to where you want to make the screenie, and 3. activate the function.
All snaps go to your "images folder" inside your user's folder. You can configure that folder to somewhere else if you enable the advanced parts of the configuration panel. IIRC it's in the "video" section. I suggest you to set it to "." so snaps save in the same folder where the video resides. If you need precision for making the captures, VLC also has a "advance frame by frame" function.
If what you need is a set of captures from each video in regular intervals, there are many video thumbnail makers, but I've never used any of them. I'd say that there is probably a set of options for ImageMagick which does exactly that.
