All very true. But I was still surprised a little by how much lag there was because I was never bothered by lag on any other TV before.
With platformer games that you've played a lot, you've trained yourself to press the jump button when you see your character a certain distance away from the pit/goomba/etc. But with extra display lag, if you react the way you remember, then you always press the buttons late. And fall in the hole. Or run into a goomba. Every damn time.
Even with the best settings on my TV for lag, it seems the lag from MAME (not much) combined with the lag from the TV (quite a lot) makes it a bad experience to play fighting games and platformers.
No worries though, since everything is fine on the 27in monitor setting 3 ft from my TV.
