Thanks to the truly excellent MAME debugger I found this a while ago. I posted this info on UKVAC back then but forgot to post it here too. The MAME driver for Pac-Land even has a small note querying whether there's a service mode Easter Egg in the game! Well there is! It works on all 5 versions of the game.
1) Go into the service menu
2) Press left or right to change the sound effect until it's $18
3) Press the TEST button to display the screen calibration test grid
4) Press right 4 times
5) Press left once
6) Press right twice
7) Press left 6 times
8 ) Press jump
Also, there's a minor Easter Egg in the high score name entry routine. If you enter your name as one of the following then the name will flash red and yellow for 12.8 seconds when you finish entering it. I presume these were some of the devs who worked on the game. Yuri is probably Yuriko Keino, the composer of the game music (as well as a whole lot more early Namco games like Dig Dug). Kissy is the main character in Baraduke (Alien Sector).
