Exactly what I've done and been using for years. 500GB drive in a USB enclosure. Problem-free backups since I bought them in 2009. Before that, I did the same with a worse enclosure and smaller drive for the previous computer I had. That first enclosure I got back in 2005 did work, but did have the odd problem, so I guess build quality might have improved over time.
