Can't change axis on flight sims (Firefox, MACH 3, etc)

Can someone help me with reversing axis on Firefox, Mach 3 and a bunch of other flight sims? When I hit the "Tab" button (for instance in "Star Wars") I get an "Analog Controls" menu which allows me reverse the up and down axis of the joystick, however on some games (Mach 3, Firefox) there is no "Analog Control" menu at all for some reason, can someone tell me how to do this? I'm running Mame64 with an X-arcade tank stick, when I try to re-assign the keys in the Tab settings it greys them out and won't change it
