MAME OS X is a dead project. This is important to what you're asking for a few reasons:

1) It's not going to be updated to be compatible with Lion.
2) ROMs you find are increasingly not going to work on it since they're normally for the latest MAME, which is now 3+ years later.
3) You'll miss out on improvements to the emulation. MK4 graphical emulation recently got greatly improved fidelity, but you won't see it in MAME OS X.

Baseline MAME has compiled directly on the Mac since 0.141, you simply need to find a GUI front end you're comfortable with. We haven't yet been able to test with Lion, but if emulating games is important to you I would strongly advise holding off on the upgrade until things have settled out.
