Setting the Parking brake and releasing it properly also saves wear and tear on the transmission as well as other components. There is less 'jerking' when bringing the car into gear from park, as well as minimal or any shifting of the vechicle when placed into park and turning the car off. Try this test:

1) When parking the car, secured in the place you want the car to remain, keep your foot remaining on the brake pedal while placing the car into park, and then applying the parking brake. Note how much the car shifts or 'jerks' back and a little forward. It is minimal, if at all, when you release the brake pedal.

2) Now performing the park without the parking brake. Your foot is on the brake, you shift the car into park and release the brake pedal. Note how much more the car shifts or 'jerks' back after you remove your foot from the brake without the parking brake.

Second test - And most noticable if your car is parked on an incline - but still pretty noticable on level road as well.

1) Your car DID NOT have the parking brake applied prior to turning the ignition off and removing your foot from the brake pedal (Scenario 2 in the first test); note the noise and movement from the vehicle when the car is placed from park into drive.

2) Your car DID have the parking brake applied (Scenario 1 in the first test); note how much less noise and movement comes from the vehicle when the car is placed into drive as a result of the parking brake being set when parked. Once the car is placed in Drive, then you remove the parking brake (With your foot on the brake pedal of course).

In the above instances I experience a quieter and smoother outcome in shifting to park and turning the car off and going from park to drive in many different vehicles, incluiding: Buicks, Hondas, Toyotas, Oldsmobiles, Hyndais, Acuras, Lexus, and Lincolns.
