Everybody is correct, season the cooking surface with fatty meats to get a nice carbon prime on those somebitches. Cleaning should only be via wirebrush with some heat. Old cooking carbon is far preferable to degassing from raw metal.
I'm not gonna touch the specifics of seasonings, as that is a very personal deal and shan't be tainted by the rants of our Southerners.
