Here's how I do my frying pans:
Take a solid fat (bacon grease, shortening) and apply a light coat to all surfaces. Make sure it's an even coat.
Place in a HOT oven (500 degrees) and wait until the fat is broken down and turns into a carbon deposit on the metal. Repeat this as needed.
As for care, just scrub it with a wire brush when it's hot.
