The guage of the wire isn't too important for the sticks and buttons, you don't want it too thick if you're wiring a lot of controls as you want it to be flexible enough to keep it tidy inside the cab. 6mm should be fine. With the crimps you want them to make a firm connection with the microswitch spades without having to force them on, I think the ultimarc wiring packs come with 0.25 inch connectors which are fine for most switches.
Plan your CP on a bit of cardboard before doing it on MDF. You need to concentrate on the underside as the controls and wiring take more space underneath than the controls do on top, look at where the wiring is going to go, where the i-pac is going to be mounted etc.
When wiring the sticks, bear in mind that the microswitch positions don't directly correspond to the joystick position (pushing right on the joystick activates the left microswitch underneath etc).
Daisy Chain your ground wires. Each button and stick doesn't need a separate ground going directly to the i-pac. You can connect the ground wires from switch to switch and just have a single ground connection to the i-pac.
Its all pretty straightforward once you get started, the main thing is to plan ahead and be methodical, decide on your layout and prepare, measure and cut the wires beforehand.
