Heh. Actually most of the games I play see some benefit with the 3 monitor setup, but my main reason for setting it up in the first place was for flight and online racing sims (FS9/X, IL-2, Rise of Flight, Rfactor, GTR/GTL etc). Have a TIR4 head tracker too, coupled with the triple monitors it makes for an incredibly immersive simming environment.
I'm using Eyefinity via an ATI HD5870, and it pretty much works with any game out there automagically but with varying degrees of success from title to title, depending upon how well a given title copes with very high resolution and wide FOV settings. Most FPS shooter games seem to work well with it, though running Crysis at 5760x1080 can be a wee bit taxing on the hardware =)
