I'd like to see more work on the Konami M2 driver, but everyone gets hyper-sensitive when I ask and it's not up to me anyhow:

Outside of that, the most interesting part of the project I'd like to see more of is the decapping of MCUs. The technical explanations on caps0ff's page are fascinating.
Progress on laserdiscs would also be cool, but I know that's probably a pipe dream at this point...
