Not going to happen, unless those games go on display in public where someone is able to take really good pictures of the game, or use a hand scanner with permission, and re-create it again.
Until recently, only one Sky Skipper existed, and that was at Nintendo of America. The game was never actually released. A user in the UK got permission to have the artwork re-created to restore a cabinet he had purchased that had an actual Sky Skipper PCB (which had been converted to Popeye). Rich from This Old Game was kind enough to make a copy of the artwork for that second cabinet. I don't know that there are plans to actually make that artwork public or not. Chomp-Chomp, same thing... game was never released in a dedicated cabinet. Pacific Arcade decided to create custom artwork to "make" a cab, which debuted at California Extreme in 2016.
