The bee thing is a callback to a scene with Rachael in the original movie. Deckard asks her what she'd do if she saw a wasp in her hand - she replies right away that she'd kill it.
But K doesn't kill the bees. He sees the bees and appears surprised, even amazed at them being there. How can something like them be alive in Las Vegas, after all this time?
