If you don't want to use any filters, there won't be any smoothing of pixels, end of story. Mame outputs the picture exactly as the original hardware did but of course, most of those cabs were CRTs which had scanlines, phospher, pixel blur etc. which smoothed the image.
Mame lets you use shaders, HLSL, BGFX etc. to simulate this.
