Many games of this era did not have in-game operator service menus. Instead they relied on DIP switches. While Centipede seems to have a DIP switch operated service menu, I can't see how to configure it from there. It looks to be only a test menu to ensure controls are working. I did not see a service menu for Missile Command, although it has a crude track ball adjustment by DIP switch for trackball size.

I believe your best bet would be to adjust the analog controls through the MAME configuration menu accessed by default by the TAB key (which also allows access to the DIP switches). The 'Analog Controls' configuration should be what you are looking for.

And while you can adjust controls by game, I believe you can create a cntrl ini file that can be used for multiple games but that is beyond my level of expertise.

Someone else should be able to chime in to clarify and provide better assistance. In any case, I believe that person would also recommend looking at the BYOAC boards for help as those folks have much experience in this area.
