Some of the 'gamtor' sets in MAME are probably things like this, modern touch-screen gamblers running higher resolution monitors. The drivers are currently non-working however, they're Coldfire (enhanced 68000) based but have all sorts of PC-like hardware bolted on to it.
however a lot of these things are pure modern PC tech, or heavily locked down, only ever rented our for location, dumb terminals for online services etc. (games that basically boot up a web browser and load a flash game stored on another server) and nobody is dumping them etc.
there are literally tens of thousands of gamblers for different markets that are not in MAME, and probably won't ever be in MAME because operators were carefully monitored with tight legislation controlling their operation and disposal of them when they were taken out of service.
most of these Aristocrat ones were also destroyed when legislation changed (the machines themselves became illegal to own / operade due to not adhering to the new standards etc. - this is actually one reason historical versions of MAME stripped out the gambling games, some devs felt it a too risky to emulate something that had been banned, but as a global project that doesn't really make much sense)
(that's why, despite a lot of people hating them it's actually a very big and significant part of the project having them emulated in terms of documenting the history of them)
