There's no such thing as whole milk any more. Modern dairies split the milk up into component parts fat, protein, other solids, etc. then mix it up in the appropriate ratios for each milk product (skim milk, each percentage, cream, double cream, and so on). Depending on the breed of cow and the feed the proportion of fat in the milk varies between 2% and 5% or so, but people want consistent products.
