Yes, that's why all modern TV's have a Game mode which turns off of the processing.
As MG already said, it's kinda weird that newer TV's come from the factory with so much BS set that you're not even seeing the whole picture. Also, I've never seen an HDTV that defaulted to the correct aspect ratio so when watching SD content (or playing old consoles) - they stretch everything to fit the screen. I'm sure this is done to appease ignorant consumers.
