HDMI will have a sharper picture because it's all digital (and thus the cable has no effect: either it syncs and you get a picture or it doesn't and you don't, there is no middle ground). VGA has a "smearing" effect at higher resolutions, depending on the cable quality and such. It's known that for old games like the ones in MAME the majority of people prefer a smeared look, which is why MAME defaults to bilinear filtering.
