Probably a product of inbreeding, genetic modification, and/or being fed/injected with growth hormones. Or, if you really want to go out on a limb - it's a genetic mutant/freak that only grows chicken muscle and can't be scientifically classified as a "chicken".

I had some chicken somewhere that was unusually tough/knotty like that. It was one of the last pieces I ate in whatever it was (seems like it was some chinese food).
