You need to play with yiq_cc and yiq_scan_time to get the picture you want if you wish to mess with YIQ mode. (YIQ = NTSC = intended for MESS drivers that normally display on TVs, not arcade machines with RGB monitors).
ETA: Setting yiq_o to 1.0 apparently gives correct colors, which should give a better baseline for playing with that mode.
