Can't say I've seen it steal file associations recently. I'll grant you that 10 years ago or so a lot of different programs did that, and RealPlayer still does, but I haven't seen QT or Itunes do it in a long time.
I'm not an Apple Fanboy (far from it actually), but I haven't had any of the intrusion problems with their windows based softwares.
