Press TAB while the game is running and enter the "controls - this game" menu. Use arrow keys, esc and return to navigate. To undo a control remap, press ESC to cycle away from your wrongly mapped control to "none" and then back to the default setting.
Note that the Metal Slug series all use digital controls, using an analog stick to control the game will not change that.
If I'm reading you right, what you want to do is impossible, due to limitations of the original game.
