You could take a look at my short list of suggestions at the top of this thread, but I'm not 100% serious about them...
Honestly, I'd say work on whatever you want, with the following exceptions if you want you see your work actually emulated in the short term: 1. ROM loading is not supported yet (many games are undumped anyhow) 2. Vector monitors are not yet supported 3. You can see what chips are at least preliminarily supported in Juergen's source tree.
And of course, many schematics have been proven to be inaccurate, etc. etc.
And of course, you could always work towards the long term.
