Now I'm hungry. But I would never mixture it with eggs, that's just nuts. I prefer it topping over a tostada with refried beans. I would remove the cheese then add head cheese and more lemon to the mix.
What you are talking about are Mexican eggs ("huevos a la mexicana". Scrambled eggs fried with chopped tomato, onion and tree chill.
