what is the difference between dial and paddle?
dial 360 degree rotation, paddle limited degree rotation?
dial = spinner, paddle = potentiometer?

A paddle reports absolute position within a defined range. It has stops at each end of the range. It could use a potentiometer or some kind of position encoder, but that’s an implementation detail.
A dial reports relative position. It has no stops. It uses an incremental encoder.
