Is there a list somewhere or a way to list what MAME games require what device ROMs?

I suspect listroms would get you what you want.

As of MAME 0.234, the -listroms command will also list the shortnames (i.e. archive names) of devices that have ROMs, as well as the filenames of the individual device ROM dumps. For example, it will note that the required ROMs for apple2 include those for the devices "a2diskiing", "d2fdc" and "votrax".
