Dumping MCU roms?

Would eventually like to get to dumping an internal rom on a Cypress CY7C63513. Only games I know of that use this are both Midway Quicksilver II I/O boards; Diego and Magicbus (yes I have these two boards along with the Substitute board but that uses a different MCU).

Also this MCU is obscure AF. I can't find any emulation/hacking related info on this. Has nobody really tackled this MCU or am I missing a minor detail? I guess the only choice will be to decap these two.

I so far went deeper into what this MCU is. It's based off of a Cypress M8 USB controller MCU. It looks like Cypress developed this MCU from the ground up.

I'm going to have to pray this chip is compatible with a good modern programmer like the TL866II Plus.
