I got the ms pacman one of those.
A week or two later my eyes are like 'oh you wanted to see close up things?! bwahahaha we are having none of that.'
Apparently you can open them up and short out a few resistors and get the other games. Some people have made switches for it.

I just had to get all of them because I have a cabaret Pac-Man (with 96-in-1), a cabaret Space Invaders (with 8-in-1) and a cocktail Galaxian.

Here's a shot of the insides. (sorry, it rotated horizontal on me)
There are 4 slots marked A-B-C-D and one 0-ohm resistor (basically a shunt). Remove the resistor and wire each A-B-C-D to the first four wires on the gray ribbon cable below (from left to right) and then you can use the joystick to select the game as you power up.
With no resistor, it goes into test mode. You can also restore the demo mode by holding both buttons down while powering up.
