Organizing MAMEUI. :(

New to MAME. Using MAMEUI64.
Completely lost on how to organize my content.
I know that Roms, CHDs, and BIOS can be placed inside the Mameui64 > Roms directory. However, I speculate that you don't need to place these files in the Roms folder and instead you can point MAME to these folders - accomplishing the same result. I know that this strategy works in original MAME by editing the mame.ini and ui.ini files to point MAME at these folders and everything will work without the need of moving anything around.
But I'm using MAMEUI64 and things may be a bit different.
Plus, I have: "EXTRAs" and "Multimedia" folders that include artwork, ctrlr, dats, folders, samples, soundtrack, videosnaps, videosnaps_SL. I'm not sure where these go?
Also, I have "Software List ROMs" and I'm not sure where they go.
I'd think in MAMEUI I should be able to go: Options > Directories and point MAME to these specific folders/files?
Could really use some help on this; driving me crazy.
Am I allowed to use this forum with a VPN? Curious, as it seems like a lot of forums don't tolerate VPN usage. Thanks.

My mame.ini file is like this...
rompaths roms;consoleroms;bios
Those paths are all in the MAME root dir. You don't need to type the full path, just the folder name.
Within my consoleroms directory there are subfolders for different software list consoles. NES, tg16, etc etc.
This setup works great for me. MAME properly detects everything. Non Arcade stuff is organized separately and the BIOS/Devices crap stays in their own separate folder.

Ok, I assume you're using original MAME? I'm using MAMEUI.
I'd rather not transfer my files to the Mameui64 folders. I should be able to keep the files separate and use paths instead. If you go Options > Directories it seems like a default path is already set up for all the Mameui64 folders, but you can add additional paths. Adding these additional paths will mean I don't have to add these files to the Mameui64 folders?
Or maybe I could even alter the mame.ini and ui.ini files. What's the best way of doing this? Here's an example of how it would be done in the mame.ini and ui.ini files for original MAME. =============================================================================================

Suggestion: Use vanilla MAME and use launchbox as its front end.
The internal UI is decent but launchbox sure makes it fun
