Large screen, use less real estate

I've had Mame and Mala set up on a computer on the floor. Have joystick and buttons all working. I'm moving towards making a cabinet and have been looking at my monitor inventory. The one thing I have a Dell 30" LCD. That placed vertically would work really nice for one of my new favorite games "Ice cold beer". That benefits great with that huge monitor. Where I run into problems is when I play classic games like DK, Frogger, etc. They want to fill the screen and that's quite overwhelming. I'm looking for input on different front ends, config options, etc that might let a game only use a portion of that huge screen I have.
Ideas?

So...no input yet, but the reading and thinking I've done. What if I used a layout file with a bezel and a marque up above. That should tie up a good bit of screen real estate, make it interesting, and make the game smaller without having to window it.

You can set the display dimenions, like turning the HV pots on a CRT, in the Tab menu. I think they stay that way (per game).
