They first tell the color of the flag in Japanese, "aka" for red (flag) and shiro for white (flag). The controls seem simple enough, one joystick for the red flag and one for the white. Does anyone know the other words they are saying for up and down?

Yeah it's various combinations of "agete" (lift up), "sagete" (lower), "agenaide" (don't lift up), "sagenaide" (don't lower) and variations, telling you to either push the joystick up, pull it down, or leave it be. Unlike in English the "don't" part comes at the end of the verb so you have to listen real closely and not jump the gun, meanwhile it's speeding up of course.
