I haven't played MAME for so long that I forgot which option show the correct screen aspect ratio. on video options (while running a 4:3 game), should I use:
- Sarndard (4:3) or - Pixel Aspect (??:??)
which one gives the corrected aspect ratio ? (like it used to appear in CRT monitors).

The pixel aspect ratio is the ratio of the resolution the game's running at, without taking into consideration what the ratio of the intended monitor is (usually 4:3 for MAME). It has a similar effect to -nokeepaspect and is intended for the same general situation: debugging a driver with extremely skinny or squat pixels.
