But they're mammals. I was thinking and hoping they'd taste like beef but without all the fat.

Or is it they are what they eat as they eat up all that precious tuna.

Or more likely that when they get caught in the nets they become "Tuna". All the same when it's ground up and put into a can.

They'd have more fat, not less. Remember marine aquatic and marine mamals all have lots of fat/blubber to keep themselves warm and to supply them with energy during their exertions.
