As mentionned in the title, I'd like to have a list of all mechanical (but NON pinball) games ... Can someone help me ?

you have to go manually through them. there is no way to make such a list automatically from the xml.
for sure there is 2mindril

That's the problem, and there is no more MAWS for such stuff
I still hope that some ROMS collectors have created a specific (sub)folder for these specific games ...

How could you forget Taito's Ice Cold Beer? Also, there are many Williams shuffle alleys - they have "(shuffle)" in the descriptive name.

Is there a strict definition of what is 'mechanical'. I don't know how many of the British AWPs count, as while they have mechanically controlled features (reels and the like), most of these are under direct CPU instruction and can therefore have their behaviour emulated with 100% accuracy. If mechanical means something we have to simulate, then only Gamball counts, because of its ping pong ball in the top box.

I overlooked this Taito game being added. I thought it wasn't supported yet.

Correct, but my guess is stephh is looking for what is currently supported.

Some of the EM hardware games also use a cpu such as Midway's 18 Wheeler using a z80 cpu for handling gameplay. 18 Wheeler is a non-screen video game, but it uses components in which it would make heavy use of artwork layout features such as lamp outputs etc.

Some of these games would need to have artwork parts either scanned or photographed. If you have access to parts to scan or photograph that is a start. You'd still need to simulate/emulate the reel movements. If there are repair manuals for the British AWPs do they have technical spec sheet charts to show the reel speeds or rotation of reels?
If the manuals have that type of info printed, then those pages can be referred to for emulating the hardware itself.
As an example Wild Gunman (additional sheet...not yet scanned) shows the film reels and the time elapsed from a cell frame point A to a cell frame point B where a specific sequence occurs. Some of the schematics for EM games show operational movements or speed of some of the mechanical parts (Midway or Allied Leisure) used in gameplay.

I am not sure if the boundaries have been fully defined yet of what defines games being under mechanical category. Data East Destiny has input buttons and then the program selects the specific text for the printer to print out to the paper. Hard to say if this could be mechanical, but if it requires external useage of a printer to provide output...maybe it can be listed as mechanical too.

There are technical sheets for some of them, particularly the off-the-shelf versions, but in practice the stepper motors speed is governed more by the rate of change of data sent by the CPU, as the outer reel is continually attracted or repelled as the coils are energised.
I suppose such things could be emulated more accurately taking into account the duty cycles, but the overall result would be near identical as a reel never achieves completely free rotation in the CPU controlled stuff. An old EM machine possibly, but there'd be a lot more to do (clutches, prize sensor bars, friction etc)
