It's being marketed as allowing you to lay out your cake decoration on something easier to work with than the top of a cake, and then easily transferring it to the top of the cake when you're perfectly happy with your creation. It's being demonstrated with mayonnaise and ketchup, as they're even less likely to hold their shape than most things you'd decorate a cake with.

The cake's frosting surface won't hold up nearly as well as the glass pane when you set the thing against it and retract. The demonstration has it in contact with the glass the whole way. You'll need to either hold it above the frosting, which means the decoration will NOT come away as cleanly, or use a fondant (harder, smooth stuff) surface, which would make it easier to decorate on the cake itself.
They'd do better to market an icing spell-checker.
