The pig is just the greatest food animal on the planet. Salami, Bacon, Sausage, Pork Chops, Ribs, Ham, Pancetta, Chorizo, Pork Rinds, Ribs, etc. There is just so much good food that comes from that little animal. There's a strong reason I'm not Jewish, and I think the pig is the strongest of them all. (With crab and lobster being a close second).

Another good version of ribs involves using a very hoppy beer in the marinade/sauce/glaze. The flavor it imparts is really indescribable when you add into it the smoke, molasses, brown sugar.......... dammit. Now I'm hungry but too f'd up on meds to drive anywhere even if a rib joint was open.

Believe it or not, the best ribs I have EVER had were at the Yak & Yeti Restaurant in Disney's Animal Kingdom. I first had them two years ago and I was floored at how awesome they were. The next year, I went back to WDW and ate there TWICE during our week stay.

I keep trying ribs at different places near where I live, hoping that I'll find some that are as good, but none even come close.
