Continuing from the PSE Knights in Armor thread on emuchat forum, I scanned and have added the instructions labels of the game here for ...hopefully for future use in case Knights in Armor ever does get emulated (finding a pcb and roms to be dumped would be a start).
The main thing is in case there are any cab owners that still might have the game, the instructions are preserved rather than the old 20th century school thought mentality of: "Cut out the needed piece and trash the rest". Very uncool imo.
If wondering what it looks like and where label is placed on cab, look at the post and the flyer for reference. Look for words Instruction panel on the figure 1 illustration.

Comes with 6 sets of instructions which mount under bezel

The sheet of 6 instructions is a regular letter size paper and the operator cuts out the specific instruction piece to match their game settings. I scanned this in tiff for best scan possible.

The instructions sheet needs to be rebuilt so a decent complete sheet can be preserved for PSE's Knights in Armor.
Update: March 2019 - Farnf posted on 03/05/19 describing what type of font is used.
-- I googled around and found the name of the machine with the odd version of the Univers font. It was the IBM Selectric Composer. An expensive version of the common IBM Selectric Typewriter.

What may have happened at the company compound of PSE back in mid 1970s when Knights in Armor was getting final touches before being released: A staff member was likely asked to create the Knights in Armor instructions sheets with a IBM Selectric Composer system with a daisy wheel ball that uses a Univers type font and then those instructions sheet paper were added to the Knights in Armor manual. Wherever a cab was shipped to along with the manual, the business operator would select which instructions piece to use and use scissors to remove specific instructions piece and placed on to the Knights in Armor bezel piece.
Text shown below is in bold setting including the cents symbol.

And also any number that appears between SCORING and JOUSTS

All remaining text is not bold.
The part that is missing is on the bottom left of the scanned insructions sheet since that was torn out when operator had set up a Knights in Armor cab many years earlier.
It should be almost exactly like the bottom right instruction piece, but the difference will be: Deposit 25 [with cent symbol] - 2 Players Only
If anyone has time to re-create a complete instructions sheet with all instructions accounted for with same font and add to artwork ftp or upload here for folks to download later thanks.

Compare the Univers font example (shown above) versus what is shown on Knights in Armor instructions sheet that was likely created with an IBM Selectric Composer system with a daisy wheel ball that uses a Univers type font...examine the following characters:
capitol "C", capitol "G", capitol "R"
shown in the sheet with words: INSTRUCTIONS and SCORING
and "1", that appears in Knights in Armor instruction sheet at: 12 JOUSTS TOTAL
Shown below is a sample of what Knights in Armor instruction cut-out label looks like.
