Which interface to use for 6 potentiometers?

Hey everybody
I bought a namco cyber cycles cabinet without PCB. I planned to rebuild it as a mame cabinet for racegames (motorcycles). Therefor I need an interface/encoder which can handle 6 potentiometers (3 potentiometers/player - steering, throttle and brake). I have seen the a-pac but he can only handle 4. Who can advice me?
