I like how it's not some specialized airbag for stunts or anything, it's literally just a pile of old mattresses.

That alone should be incentive to not accidentally fall during filming the action scenes.
One of the producers instructing actors or stunt performers: "One or two mattresses might have poo stains or even poo on them. We're not sure ourselves, but they are mixed in there with the mattresses. So avoid falling and let's get this film action scene wrapped up...okay!?"

And they're spread out (and not so much as arranged in neat and orderly fashion)... Not just under the area where he'll fall -where you'd think that'd be enough. I almost smell a photoshop job (or joke) here, but it could be legit.

Being the Death Star... ALL of those mattresses had the tags illegally removed... the scene is just as scary.

No. They were borrowed from the porno studio in the adjacent lot.

If I remember correctly, that's an actual behind-the-scenes set photo that J. W. Rinzler dug out of the archives for his book "The Making of Star Wars: The Empire Strikes Back". I have the first one in the series ("The Making of Star Wars: A New Hope") and it is awesome and well worth the expense.

If you arrange them neatly, I'd think you're at risk of having someone, over hundreds of stunt falls, manage to come down in just the wrong place, slipping between mattresses all the way down.

Look at the guys standing there, that pile must be about 5 feet tall.

Perhaps it was just a natural formation of smelly mattresses and Lucasfilms created a set around it.

The famous scene where David Prowse said "Obi-Wan killed your father!"
