What is "Maygay" and why is there so many "NOT WORKING" ROMs?
can anybody tell me what they are and why don't they work?

Slot machines and pinball machines aren't playable because those require machines.
But the video slots and video pinball's are playable. Except on the ones that are marked in red.
Same for every single games.
Marked in red mean not working because of protection, issues, no machine, not fully written and not fully dump. Don't worry about these.

looks like fruit machine stuff from what google images shows. The other results did have me laughing, especially the Pokémon YouTube Poop - May is gay hit.
you can also search the mameinfo.dat for that stuff

Cabinets come in many shapes and sizes. A CRT (video) only display is not the definition of arcade, in the broad sense. To me, an arcade game is any gaming device which has been put into the public for consumption which generally requires real money investment to play, use or enjoy. Pinball machine owners would argue that their Pinball machines are every bit as much as a "cabinet" as any other arcade machine... same with gambling devices.
To answer your earlier questions about so many NOT_WORKING games - there is a lot of work to do before any game can be made working and the gamblers is largely virgin territory and require a lot of work on them to be considered playable and functioning. It doesn't lessen the need to document romsets as they are found and researched since MAME is a living documentation project for everything related to arcades. Many times MAME is used for reference more than simply for game playing - to help owners of the dying numbers of these original machines' maintain and repair them with the knowledge in the source files and other related files.

The word somehow derives from http://en.wikipedia.org/wiki/Arcade_(architecture)
I believe the term refers to there being rows of cabinets next to each other. A single video game is not an arcade.
Because the term has been misused so much, trying to argue over it's meaning is pretty pointless.
IMO A row of slot machines is as much an arcade as a row of video games. I agree that it doesn't tie up with what Nicola originally meant by Arcade Machine, but he got it wrong too (he might have known but really needed a vowel there).
