You can change on the video options by pressing on the tab button. Use MAMEUI.

I made a cheat for Cool Riders to get to the China level to compare MAME with the arcade version. And it's very close to the original
But the "4th" in "4th Stage" must be complete in red, like in this video:
Unzip coolridr.zip into yout MAME\cheat folder and have fun
